Ratatouille, from garden to plate!

Our ratatouille was such a fabulous success this year!

Here are the plants growing our yummy fresh produce...

Then we harvested our capsicum, tomatoes and eggplants and rushed them straight to the kitchen to prepare a feast of ratatouille!

If you want to make some ratatouille at home, first collect your fresh veges (You can get some at the shops if you don't have these growing!)

Next saute some chopped onion and garlic in some olive oil.

Now have some fun chopping up all of those lovely veges!

Now saute your chopped capsicums, tomatoes, eggplants.... and you can throw in any courgettes or beans that you have in the fridge. They will be delicious too!

Give everything a good stir to stop it from sticking on the bottom of the pan!

Add some chopped herbs to add extra flavour. Oregano, parsley and basil are good choices.

Keep cooking until all the veges are tender.

Serve up and impress your friends! We served ours on some crusty french bread, but you could serve it on some pasta, or with some rice, or alongside your favourite BBQ meat.

Thanks Cowley eco-warriors! You are great chefs!
